As a child, I absolutely adored those small cakes from traditional pastry shops, packed in bags, so soft and delicious! This time, I opted for glutinous rice flour instead of regular all-purpose flour. Although the resulting cakes didn’t have the usual ultra-soft texture, they gained a unique chewiness and flavor, which was absolutely delightful!
Glutinous rice cake
Ingredients
- 4 egg
- 90 g sugar
- 195 g glutinous rice flour
- 5 g baking powder
- 30 ml milk
- 30 ml vegetable oil
Instructions
- In a large bowl, use an electric whisk to beat eggs and sugar until very thick and can form a figure of 8
- Sift in glutinous rice flour and baking powder, mix well
- Add milk and vegetable oil and mix gently. Pour the cake batter into the baking pan. Place in the preheated 170C oven and bake for about 20-25 minutes or until the cake is fully cooked!
