Jujube walnut cake

Ingredients
- 100 g pitted dried red dates
- 50 g egg
- 90 g yogurt
- 30 g vegetable oil
- 30 g brown sugar
- 1 g Salt
- 100 g flour
- 3 g baking powder
- 2 g baking soda powder
- 50 g Walnut
Instructions
- Rinse the dried red dates and ✂️remove the cores
- Add 100g of pitted red dates to 150g of water and cook over low heat for about 10 minutes to soften the red dates.
- Finally, boil the water dry and let cool ~the cooked red dates are about 170g
- Put the boiled red dates into a blender and blend into a puree. It doesn't matter if it's a little grainy.
- Put the eggs, yogurt, cooking oil, brown sugar, and salt into a container and mix well ~(Sam's ingredient list says rapeseed oil, which I don't have at home, so I used corn oil)
- Add red date puree
- Mix well
- After mixing the flour + baking powder + baking soda powder, sift and add
- Stir roughly until evenly mixed, don't over mix.
- Finally add chopped walnuts and mix well
- Put the batter into the mold, and sprinkle some walnut kernels on top for decoration(I use an 18*9*7cm pound cake mold. It can be easily unmolded by covering it with baking paper or coating it with oil and flour in advance)
- Put it into the oven preheated to 180°C and bake for about 40 minutes. ⚠️Every oven has different firepower. Adjust the time as appropriate until a toothpick inserted into the cake comes out without any stickiness. ⚠️Bake for about 10 minutes. After the surface is crusted, take it out, use a knife to cut a line in the middle of the batter, and then put it in the oven to continue baking. This will make the cake expand more beautifully and have a natural crack~⚠️Pay attention during the process. After the surface is baked and colored, it needs to be covered with tin foil. , to prevent the color from being too dark
